DELIGHTFUL CHOCOLATE & NUT BANANA BREAD

WHAT'S IT GOOD FOR:

bananas: packed with fiber, iron and potassium, natural sweetener, provides energy

nuts: heart-healthy monounsaturated fats

cacao powder: mood improver, high in antioxidants and magnesium

enough for one bread

INGREDIENTS

DRY INGREDIENTS

200 g whole wheat flour

2 tbsp cacao powder

1 tsp baking powder

1/2 tsp vanilla extract

1 tsp flaxseed powder

a pinch of salt

5 tbsp brown sugar

50 g dark chocolate (dairy free)

3 tbsp mixed nuts (hazelnuts, almonds, walnuts)

LIQUID INGREDIENTS

2 very-ripe bananas

100 g vegan butter

100 ml plant-based milk

1 tsp apple cider vinegar

GOOD TO HAVE: small & large bowl, bread pan, whisker

HOW TO

1. Pre-heat oven to 350°F or 180°C. Grease a nonstick bread pan with a little bit of vegan butter. In a small bowl, mash bananas and mix with melted vegan butter, apple cider vinegar and plant-based milk until smooth.

2. In a large bowl, add flour, cocao & baking powder, 1 tsp flaxseed powder, brown sugar, vanilla extract and salt. Add dry ingredients to the liquid ones and whisk until everything is well combined. Cut chocolate and nuts in small chunks and add them to the batter. Once again mix well.

3. Bake banana bread for about 45 minutes and try with a toothpick, when it comes out clean it's done. Let cool down in the pan for about 10-15 minutes, then remove it from the pan and transfer it to a cooling rack. Slice & Enjoy!
