Here it is:
enough for 2 servings or 6 tacos
INGREDIENTS
1/2 cauliflower
1/2 large onion
1 red pepper
6 small tacos
1 tbsp red pepper powder
salt and pepper
2-3 tbsp olive oil

2 handful mixed salad
AVOCADO SAUCE
1 avocado
salt and pepper
1 tbsp lemon juice
2-3 tbsp olive oil
1/2 garlic clove
1/4 tsp ground cumin powder
a few chili flakes
2 tbsp water
GOOD TO HAVE:
large bowl, parchment paper, baking sheet,
high-speed blender or food processor, saucepan
HOW TO
1. Pre-heat oven to about 200°C or 400°F. Cut onion and red pepper in small chunks and cauliflower into bite sized florets. Throw everything together with red pepper powder into a large bowl and drizzle with olive oil and sprinkle with salt and pepper.
Spread veggies out on a parchment paper lined baking sheet and bake for about 15-20 minutes until the cauliflower gets soft.
2. In the meantime for the avocado sauce, place all ingredients in a blender or food processor and blend until smooth and creamy, 3-5 minutes should be enough. Set aside.
3. In a saucepan add a little bit of olive oil (1 tsp) and heat up tacos over medium heat - for about 2 minutes one each side until they get lightly brown and crispy.
4. Once the cauliflower is ready, place tacos on a plate and fill with salad,
veggies and avocado sauce.
Add some extra lemon juice or chili flakes if you like and enjoy!
