WHAT'S IT GOOD FOR
red quinoa: high in protein, fiber, calcium, manganese and magnesium
enough for two servings
INGREDIENTS
100 g red quinoa
200 ml water
4 stalks celery and also the green part
1 red apple
Tahini Dressing:
3 tbsp tahini
3 tbsp water
1 tsp soy sauce
1 tbsp olive oil
1 tsp honey
1 tbsp lemon juice
a pinch salt & pepper
GOOD TO HAVE: small pot and bowl, mandoline slicer, fine-mesh strainer
HOW TO
1. First bring water to boil for the quinoa.
Pour quinoa into a fine-mesh strainer and quickly rinse under cold running water.
Then add quinoa to the pot and let it simmer for about 20 minutes. Stir from time to time.
2. Then prepare tahini dressing.
Add all ingredients for the dressing in a small bowl and stir until well combined.
Chop celery into thin slices. Also use the green part. Same with the apple.
Cut into half, core and use a mandoline slicer or a knife to cut apple into thin slices.
Mix apple and celerey slices in a bowl.
2. Put quinoa together with the celery & apple salad in a bowl and top with tahini dressing. Enjoy!
