WINTER HONEY STEWED APRICOTS

...but good to have all year round ;) If you've got some frozen apricots left from warmer summer days - this is the best way to use them. Except baking a cake!

enough for two 250 ml glass jars

INGREDIENTS:

500 g frozen apricots (or fresh ones)

150 ml honey

½ tsp grounded cinnamon (or use a whole cinnamon stick while cooking)

¼ tsp grounded cardamom

¼ tsp grounded cloves

GOOD TO HAVE: glass jars

HOW TO:

1. If you use frozen apricots like me, (you probably have the stones removed earlier) otherwise just cut the apricots into halfs remove the pit and put them in a large pot. Heat up your apricots until they start to cook and you see some bubbles - then turn the heat down and slowly cook for about 10 more minutes on low heat. Just until they get really soft and the consistency is fairly thick.

2. Add honey and spices and give it a stir. When you’re happy with the consistency fill your stewed apricots into glasses. Enjoy! They taste wonderful in your breakfast porridge or with pancakes and waffles.

Unopened your stewed apricots probably last for a few weeks.

(I don't think much longer because of the lower sugar content).

Definitley put your glass in the fridge after you’ve opened it.
