RAINBOW CARROT CELERY SALAD

INGREDIENTS:

1 apple

2 large celery sticks

4 different colored carrots

DRESSING:

3 tbsp olive oil

white vinegar

1 tbsp lemon juice

salt & pepper

TOPPING:

2 tbsp roasted pumpkin seeds

2 tbsp roasted soybeans

1 tbsp chopped cilantro

GOOD TO HAVE: peeler, julienne cutter, slicer

HOW TO:

1. Use a peeler to get the skin off the carrots and use either a julienne cutter or a peeler to cut the carrots in some fine strips. Prepare apple and celery sticks by using slicer to get thin pieces. Put everything in a bowl and mix it well.

2. In an extra bowl mix oil, vinegar, lemon juice, salt and pepper until everything is well combined.
