ALMOND APRICOT BREAKFAST SHAKE


This delicious breakfast shake is packed with plenty of fibre, vitamin C and protein.

enough for 1 smoothie

Ingredients:

2-3 apricots (frozen or dried ones)

200-250 ml almond milk (any other plant based milk works too)

2 tablespoons oats

½ teaspoon cinnamon

extra topping: coconut yoghurt

Good to have: blender

How to:

If you use dried apricots pre-soak them in hot water for at least about 1 to 2 hours - remove water before adding to the blender. If you use frozen ones start right away.

Put all your ingredients in the blender and mix until it has the right consistency for you. I like it when it’s super creamy – so I blend for about 2 minutes. Fill in a glass and top with some coconut yoghurt and cinnamon. Enjoy!
